Easy Blueberry Pancakes

Ingredients:

  • 2 c Pancake Mix
  • 6 oz Fresh Blueberries
  • 1-1/2 C Water
  • 1/2 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Lemon Zest (optional)
  • 1 Tablespoon Sugar

Directions:

  1. In a large bowl, sift together pancake mix and sugar. Next, mix in the water, vanilla extract, and lemon zest. Then, fold in the blueberries.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
